- Ground almonds (blanched and peeled) – 2 cups
- Condensed milk – 2 cups
- Milk – ½ cup
- Fresh cream – 8 tablespoons
- Saffron – 15 strands
- Pistachios – 6 pieces
- Sugar – as required
- Dry fruits (cashew, almonds) – for garnishing as required
Here is the Process
Follow this process step by step and in no time you will have your Kulfi prepared in front of you.
- STEP 1
Take almonds and soak them in water overnight. Ensure that they are completely blanched and peeled after soaking overnight before moving on.
- STEP 2
Take ground almonds, cream, sugar and condensed milk in a large bowl and whisk them together until they form a thick consistency. Keep the thick mixture aside.
- STEP 3
Take a saucepan and pour milk in it. Heat the milk over a high flame to boil it. As soon as the milk starts boiling, add the saffron strands to it. Mix the saffron strands and milk well and let it simmer for 2 to 3 minutes.
Remove the pan from the flame and let the mixture cool down for some time.
- STEP 4
Once the saffron and milk mixture has cooled down to room temperature, add it to the almond, cream and condensed milk mixture. The consistency of the mixture should be thick and creamy.
- STEP 5
Now, take another pan and heat it over medium flame. Take some almonds and pistachios and dry roast them over the pan for a few seconds. Upon dry roasting them, crush them and add the roasted dry fruits to the kulfi mixture. Reserve some roasted dry fruits for garnish.
- STEP 6
Mix the mixture and dry fruits well. Pour the mixture into the Kulfi moulds and any other container you desire. Cover the top with the lid of the mould or the container with butter paper. Let the mixture freeze for a few hours in the freezer.
- STEP 7
Remove the frozen kulfi from the moulds and serve it on a plate chopped or as you like. Sprinkle some dry fruits and serve this delicious kulfi malai dish to relish.
